Happy US Vegetarian Week!!

Are you up to the challenge?

Since I became a vegetarian, I have found one thing for sure – meals take MUCH more planning.  I no longer have the ability nor do I want to  – just grab a Lean Cuisine and race out the door for work.  In fact, our grocery list has very few items on it that are found in sections other than produce.  Over the last couple of weeks, our shopping and recipe index has become more produce driven and less focused on canned/frozen items which is super exciting progress!
